Ok, I know I have been slacking when it comes to updating my recipe of the month. I am going to work harder at this. So here is June's recipe...
Ingredients:
1 lb ground beef
1 can (15-16 oz) chili beans in sauce, undrained
1 can (8oz) tomato sauce
2 tbs. taco sauce or salsa
2-4 tsp. chili powder
1 tsp. garlic powder
2 cups coarsely broken tortilla chips
8 med. green onions (1/2 c.)
1 med. tomato, chopped (3/4 c.)
1 c. shredded Cheddar or Monterey Jack cheese
Directions:
1. Heat oven to 350. In a skillet cook beef until brown, drain. Reduce heat. Stir in beans, tomato sauce, taco sauce, chili powder and garlic powder. Heat to boiling, stirring occasionally.
2. In ungreased casserole dish, place tortilla chips. Top with beef mixture. Sprinkle with onions, tomato, and cheese.
3. Back 20-30 minutes or until hot and bubbly. Arrange additional tortilla chips around edges of casserole dish if you want.
I made this dish last night for dinner and it was supper yummy!!! Enjoy!!!

My Newest Creation
'Garden Bear' is my newest cuddle quilt creation. Some friends of ours are due in August and they have decided to do a garden themed nursery. I have been dying to do a cuddle quilt with a bear on it and their theme gave me the perfect opportunity. As you can see our friends chose the name Ella for their sweet baby girl. I was so excited that they had already picked a name because I love putting the baby's name on my cuddle quilts it just makes them so personal. This quilt was so much fun to make, I really enjoyed putting the color and design together. Hopefully they will love the quilt as much as I do.

My Girly Girl
There is something so special about having a little girl. She shares so many of my likes. She likes shopping, getting her hair done, putting makeup on, baking, eating, and so much more. One of our favorite things to do is get a pedicure. Now I know what you must be thinking my 4 year old gets pedicures, but in actuality she just gets her nails painted but I on the other hand get the whole enchilada. Well we haven't had a chance to go get a pedicure lately so we came up with the next best thing. PAINT OUR OWN NAILS!!! This became a really good fine motor activity for Emma. She picked her color and had to apply the polish all by herself. She did a great job and had a lot of fun doing it!
